Green Beans with Fresh Tomato Sauce

I adapted this recipe in my Mediterranean Cookbook, it's a Turkish Cuisine called Lubyi Bi Zayt, meaning Green Beans with Tomato and Olive Oil. Sometimes, I get tired of eating the same way of cooking green beans. OK, the result is just like I'm eating beans with fresh tomato sauce, that's why I titled this dish Green Beans with Fresh Tomato Sauce.

1 medium onion, chopped
3 cloves garlic, chopped
3 medium fresh tomato, chopped
1/2 teaspoon sugar (optional)
bunch of green beans, trimmed and cut in half
1 teaspoon dried parsley
salt and pepper

Heat the olive oil over medium heat, add the onion and cook until softened, then add the garlic and cook for 30 seconds. Add the tomato, sugar, and 1/4 cup water, season with salt and pepper. Bring to the boil, then reduce the heat and simmer for 10 minutes. Add the beans and simmer for another 10 minutes or until the beans are tender and the tomato sauce is pulpy.Add parsley, adjust the seasoning according to taste.


Serve immediately, as a side dish.

Hi Lani, I like green beans but rarely eat them plain. This is the perfect adornment to make them more palatable to me and the sauce sounds delicious.

Well, this certainly is an interesting twist on classic green beans. I'm always amazed at the ideas others come up with and find myself thinking, why didn't I think of that?!

I love green beans but have always eaten them plain before. However, after seeing your recipe, I think I've been missing out on something special. I'll remember this one for next time.
