My First Maki "Sushi Roll"
Living in the Philippines for three months, I'm missing so much Japanese Food. Although we can find some of the ingredients, but not much as in Taipei. The rice, sweet mayonaise, and nori I used here were still bought in Sushi Bar in Taipei. Let me called this ShiNoy (Sushi with the taste of Pinoy "Filipino").

Simple Buttered Vegetables
It's almost a month since I moved back to the Philippines, but I haven't had the chance to cook seriously since my sister cooks and bakes a lot. I'm still re-adapting the lifestyle back here, I would say I'm living a comfortable life with family around.
Anyways, after my health check-up I have to avoid some food and to that I have to eat more vegetables. Tonight I made sauteed mix vegetables for dinner.
1 half cabbage, sliced
1 small cucumber, sliced
1 small carrot, sliced
1 small onion, sliced
1 clove garlic, chopped
1 egg
salt and pepper to taste
butter
Heat the pan, add the butter and saute garlic and onion. Add the vegetables and egg. Seasoned with salt and pepper. Serve as sidedish.
We only eat it as a meal, enjoy!

Chocolaty Multi-grain Pancake
It's not from scratch but I added chocolate powder and chips to the multi-grain pancake mix. It turned out like chocolate brownies or simply chocolate cake, and dding cream on top made it rich taste.

Sweet Potato Fries
A sweet and healthy fries for today! We used to add sugar to sweet potato and place in a stick for snack. But this time, the sweet potato itself is already sweet. So, let it be that way.

Hot Pot Chocolate (Fondue)
I'll be moving back to the Philippines for good, I'll be busy and while I'm away, here's a treat to everyone! I'll be back posting once I'm settled. See you guys when I get back. Cheers!
Time to dip the Pancake Muffin and Choco Coconut Balls in this small pot I bought in Dante Coffee. For those who love chocolate, never mind if it's summer, just let it cool first before eating :) The kids love it!

Chocolate Coconut Balls and Pancake Muffin
Nothing difference from the first Coconut Balls I made, I just added chocolate powder to the mixture. For the muffin, I used pancake mix, followed the procedure from the box, and just baked in muffin pan. I made these two for the hot chocolate pot (also known as chocolate fondue).

Simple Carrot Cupcake
The first time I tried eating carrot cake/bread was my sister's home-baked. She used to make a lot and give to friends as a gift on Christmas. I made this carrot cupcake today, definitely not the same as hers. This is just simple one.

Avocado Ice Cream
It's not yet avocado season for sure, you know why? I bought 2 avocados for NT$145. In fact I can buy for only NT$40 during avocado season. I was just craving to make avocado ice scramble, the way we used to do when were little. For a change, this time I added cream that made it into Avocado Ice cream. That's right, time to beat the heat!

Baked Penne with Spinach
It's just a simple dinner, no exact recipe! Run out of lasagna pasta, instead I used penne pasta and I added spinach, baked until the mix-grated cheese melted. The left over can just be heated for the next meal or simple eat it like cold noodle salad.

Simple Jackfruit Candy
Jackfruit is a kind of tropical fruit that looks like Durian, but bigger than Durian. It's yellow inside and sweet when it's ripe. I remember in the place where I grew up, we had a tree and it had lots of fruits down to the ground. I'm not fun of eating jackfruit, but I usually made them into candies by cooking with condensed milk. I bought a can of jackfruit in syrup at Vietnamese Restaurant here in Taipei, and here's the catch it's made in Thailand. Filipino made the candies and International Classmates around the globe tasted them. This is what I call "a taste of culture" :) This is similar to Yema (Custard Candy), but I didn't add any eggs that made into just Simple Jackfruit Candy.

Simple Whole Wheat French Toast
The whole wheat bread I made that turned to french toast! What a nice day to start the day when eating proper homemade breakfast specially in this side of town where breakfast stores are all over. French toast and hot dog, plus a few seedless grapes. Everyone knows how to make french toast, but I never posted one so here it is :)

Honey and Lime Fried Chicken
This is supposed to be baked honey chicken, I made Sweet Potato Fries and I decided to use the same canola oil for this chicken. From the color, it really shows it has sweetness since it's sticky. A mixture of sweet and sour in a fried chicken.

Tuna Sandwich and Blanched Vegetables
Bento #12 ~ Tuna Sandwich and Blanched Veges |
I baked the whole wheat bread creating into fun shaped like flowers, hearts, and even bears. I used tuna in water fresh from the can, I seldom eat canned food and if ever I have to add lots of vegetables to the meal. In here I used steamed okra wrapped in fish cake and baby corn as side dish. I also have mixed salad and seedless grapes for dessert.

Weekend Food Tour: Come On Italy St.
Real Italian Taste but a little bit pricey, I guess because they used dried tomatoes in all their meals knowing that dried tomatoes are hard to find in this town. The food is really good, I enjoyed everything until to last bite.

Chocolate Chip Walnut Bars
How many hearts can you see? |
A big hit! Just by looking at it you can tell it's really good and what more if you have a piece in your hand. First time to make bars and I'll make again and again, changing or adding ingredients more next time. This Chocolate Chip and Walnut Bars is dapted from my cookbook Hmmm Baking. I don't have a square baking sheet, but I managed to cut them in bars. I used bitter-sweet chocolate chips and didn't add much sugar.

Fresh Mango and Walnut Bread
The other day, I made Mango and Coconut Cupcake and I still have a cup of puree from the mango I bought. If banana is so good in bread, why not mango... here's the result, I would say this is Mango Bread in a Cup. It looks hard on top, but I like it that way. I really lessened the butter and sugar this time.

Sweet Fresh Milk Bread
This is one of the posts disappeared last week! I adapted the recipe from Fall in Love with Baking. Next time I'll be making this into rolls since I love the brown part. The bread is soft and it smells so good. I brought it in the church for food tasting and my friends said it's tasty and creamy!
