Vietnamese Coconut Tarts

Another interesting recipe I adapted  from Wandering Chopsticks is Coconut Tarts from Vietnam. I used wheat flour and brown sugar. It is not that sweet and my Vietnamese classmates like the way it is. One of them, doesn't even know that this is a popular in Vietnam, it was her first time to try :)

1 cup wheat flour
1 stick butter (room temperature)
1/4 cup brown sugar
1 teaspoon vanilla
For the filling
1 cup unsweetened coconut flakes
1/3 cup wheat flour
1/3 cup brown sugar
1 egg
1 teaspoon baking powder




In a mixing bowl, beat 1/4 cup sugar and 1 teaspoon vanilla extract into butter until creamy.
Add 1 cup of flour and mix until well blended. Press the mixture into molder. Prick the base with fork, and bake for 165°C (325°F) for 15 - 20 minutes.

Prepare the filling by adding 1 cup of unsweetened coconut flakes, 1/3 cup sugar, 1 egg, 1 teaspoon baking powder. Set aside.

When the base is ready, put the coconut filling over the baked base. Baked for 10 - 15 minutes in 190°C (375°F) or until the coconut flakes turn brown.

Lani, anything with coconut in it is a winner in my book. Funny that your vietnamese friend had never heard or tasted them. I guess it it like so many regional dishes in the states -gumbo comes to mind -. Thanks for sharing this with us at the Hearth and Soul Hop!
