Coconut Candy Chewy Cookies

Happy Chinese New Year or Happy Lunar Year!

In Lunar calendar, literally Chinese New Year is the beginning of Spring. In my place where I live, candies welcome the arrival of Spring. To welcome the spring, I made coconut cookies and added some choco-candies to make them colorful.

2 cups all purpose flour
2 teaspoon cornstarch
100g softened butter (1 stick)
1 cup brown sugar
1/2 cup dried coconut
1 egg
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
some choco-candies

Preheat the oven about175 ̊C(350 ̊F).  Prepare the baking sheet lined with parchment . In a bowl, cream together butter and sugar until smooth. Add egg and vanilla and blend in. Stir in the flour, cornstarch, baking soda, salt, and coconut. Scoop tablespoons onto the parchment sheet, place the choco-candy on top of each. Bake for 8 to 10 minutes or until golden brown. Let cool slightly and enjoy.

I only wish it was the first day of Spring! We are in the middle of a huge snowstorm here! These cookies look delicious, though, a perfect thing to make while waiting for the snow to stop. Thanks for sharing!

I'm sorry to hear that, even my friends from Australia, all I can offer to them are my prayers, praying that they will be safe no matter what.
