Baked Penne with Spinach

It's just a simple dinner, no exact recipe! Run out of lasagna pasta, instead I used penne pasta and I added spinach, baked until the mix-grated cheese melted. The left over can just be heated for the next meal or simple eat it like cold noodle salad.

cooked penne
bundle of spinach, boiled and drained
fresh tomatoes (I used 1 small tomato and a cup of cherry tomatoes), chopped
beef, chopped (or ground)
salt and pepper
Italian seasoning
cheese (I used mixed kind)
fresh basil
garlic and onion, chopped

Saute garlic and onion, add the tomato and beef, season with salt, pepper, and Italian seasoning. Simmer until cooked. Arranged the penne in a lasagna style dish, add sauce and spinach. Sprinkle with cheese. Repeat the procedure until the dish is full. Bake until the cheese melts.

Enjoy!

Looks delicious! We're having something similar tonight, too. I use homemade Italian sausage instead and add ricotta cheese. To me, anything with pasta is a winner!
