Banana Cupcake

I've been baking a lot of Banana Bread lately, for  a change I made banana cupcakes. The recipe is similar in making banana bread but this time I made sure that the bananas were really riped. It really made a lot difference!

1 1/2 cups all purpose flour
1 tablespoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup butter ( I used 50g)
1/4 cup brown sugar
2 2ggs
3 bananas
1/4 cup milk (+ 1 tablespoon lemon juice)

Preheat the oven to 180 ̊C(350 ̊F). Prepare the muffin pan by putting paper liners.Sift flour, salt, baking powder, and cinnamon in a large bowl. Peel the banana and mash with a fork. Put the butter and sugar in a mixing bowl and beat together until fluffy. Gradually beat in the eggs and cinnamon.Add the mashed banana and continue mixing until all the ingredients are incorporated. Add the dry ingredients to the batter, continue beating until smooth, then add the milk (buttermilk).


Spoon the batter into the prepared pan. Bake in the preheated oven for 40-40 minutes or until cook. Let cool in the pan for few minutes, then turn out onto a wire rack to cool completely.

I ran out of cupcake molder do I directly baked this from the bread molder. The cake looks like smiling :)

Cut the cake into small pieces, and I put them back to the oven for 5 minutes more. I brought these for potluck.
