Spaghetti and Brocolli
My two previous posts aren't showing, I guess it will take time before Blogger could figure/return them. Anyways, when I made this bento my husband told me it looks like for Halloween :) I thought of Jack-o-lantern. I'm a bit frugal here, I used the left over pizza sauce I made, chopped some peppered beef and added fresh basil and cheese. A great meal indeed!

Scallop and Spinach Pasta
For some of you know that one of my favorites meal is pasta. I love anything about pasta! I keep on discovering different ways how to prepare pasta in a healthy way. Here's another try I made, a very simple but healthy.
some cook pasta ( I used spaghetti)
2 bundles spinach
few scallops (or more)
1 tablespoon extra virgin olive oil
1 teaspoon lemon juice
2 cloves garlic, chopped
salt and pepper to taste
mozarella cheese (optional)
In a pan, heat oil and saute garlic and scallop. Add the spinach and lemon juice, season with salt and pepper. Place on top of pasta. Sprinkle with cheese. Serve hot.

Japanese Style Beef Spaghetti
Sukiyaki Spaghetti (Noodles), symbolizes long life; to have a son to carry on the family name; prosperity. This I mentioned in my Chinese New Year that I prepared. I really don't know what will I call this dish, since I used most of seasonings in making Sukiyaki, then maybe Sukiyaki Spaghetti or Japanese Style Beef Sphagetti. I also added baby corn instead of mushroom (there's no place to market on Chinese New Year Days).
1/2 kilo beef, sliced sukiyaki style (long, veryt hin0
1 tablespoon butter
4 tablespoons mirin
1/2 cup light soysauce
salt and pepper (optional)
baby corn (or any vegetables)
bunch of onion leeks, sliced into 3cm
pasta/noodles
bonito flakes
Marinate beef with soysauce and mirin, pan-fry in a butter until cooked. Remove and set aside. Using the same pan, add water (or beef stock) with bonito flakes, once the water is boiling remove the bonito flakes. Cook the pasta until al dente. Drain the pasta, add the noodles and vegetables. Season with salt and pepper.
I'm a bit busy for my mid-term Chinese Exams this week, so I'm connecting this to:

Tomato and Cheese Spaghetti
A very simple to prepare, it has no exact recipe. I bought the tomato and cheese sauce in the Philippines the last time I was there. It's new to me, so I grabbed and try it although I added fresh tomato, onion, and garlic + 250g ground beef, salt and pepper, and Italian seasoning.
Cook the pasta as per direction in the package.
Serve with the sauce on top. Sprinkle with Parmesan cheese. I also added cherry tomatoes.
I mixed all the sauce with pasta. Add some mozzarella cheese on top and baked it for 10 minutes or until the cheese melted. I brought this in our Italian Potluck along with Wheat Bruschetta,Conchiglie in Cream Sauce, and Peaches and Cream Cheese Cake.

Spaghetti with Scallops
It's too obvious that I love Italian Food :), from my posts lately! This is another simple way to prepare pasta from Guliano Gasali's Kitchen 06 Cookbook. I only adapted some ways how to cook it. Originally, the main pasta should be Linguini, and using mussels and crab meat as other ingredients. I also added celery. This is so good, I love it!
300g spaghetti (or linguini), cooked as per direction in the package
300g scallops
3 cloves garlic, chopped
1 fresh chili, chopped (optional)
2 medium tomatoes, coarsely chopped
1 celery, chopped
1 cup white wine
some parsley, chopped (dry parsley)
salt and pepper to taste
extra-virgin olive oil
In a large pan, heat the oil and saute garlic until slightly brown. Add scallops, toss with garlic. Add white wine and cook until it has evaporated. Add the chili, celery, and tomatoes, season with salt and pepper, and cook for 10 minutes. Toss spaghetti with the sauce. Add parsley and toss well.
