B is for Baked Banana Bread

For today, I'm featuring my very first baked banana bread in an oven toaster only. I remember my older sister making banana bread to give away for close friends during Christmas Season. Anyways, I adapted the recipe from Cindy Harris of Daily Bread. I like the way she presented her shows in podcast, very simple instructions. I made some changes, mostly my friends are not fun of eating too sweet cake/bread.


100g butter (in my case, the butter is room temperature)
3/4 cup brown sugar
2 mashed bananas
2 eggs
1 teaspoon vanilla

1 1/2 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup all purpose cream (plus I squeezed drops of lemon juice)


In a mixing bowl, mix the butter and sugar until fluffy. Add bananas, eggs, and vanilla and continue mixing until incorporated. In another bowl, mix flour, baking soda, salt, and walnuts. Add the dry ingredients to the batter, then the sour cream. Pour the batter to the prepared loaf mold. Bake fo 50-55 minutes in about175 ̊C(350 ̊F).

Seriously, one of my favorite foods! I can pass on chocolate, but not pumpkin or banana breads.

Oh my, your banana bread looks delicious. I love that you use large pieces of nuts.. I love the texture and crunch.

I love baking, and my Buttermilk Banana bread is also a good recipe.

What a "sweet" way to use the letter B.

I love banans but as I am on a diet this wouldn't do - however next time you eat a banana try chopping into pieces and sprinkling lemon juice over - delicious!

Banana Bread! Certainly a favourite in this household and something I do quite well. Have you ever tried it with dried cranberries or chocolate chips? Yum!
