Just Beans for Monday

Just a simple meatless dish. I just boiled water, blanched the beans, removed the skin then sauteed in olive oil, seasoned with salt and pepper.

Simple Irish Soda Bread

Just for a try, I tried making this Irsih Soda Bread from my cookbook Hmmm Baking... The bread that goes with any soup.

2 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
almost full cup buttermilk

Preheat the oven for 200 ̊C(400 ̊F). Place a parchment paper in a baking sheet. Sift the flour, salt, and baking soda together into a bowl. Make a well in the center and pour in most of the buttermilk. Mix well, first with wooden spoon and then with hands. The dough should be soft but not too wet. Add more buttermilk, if necessary. Turn out th dough onto a lightly floured counter and knead lightly and briefly. Shape into a circle. Put the loaf onto a prepared baking sheet and cut a cross on the top with sharp knife. Bake for 25-30 minutes.

Transfer to a wire rack to cool slightly, serve war.

Tangy Lemon Bread

Adapted from the cookbook Mmmm... Baking, I don't know if it's the real outcome will be crumbled when slicing this lemon bread. Maybe, I used low gluten flour unlike in the original recipe using all purpose flour. The taste is kind of tangy, that's why I named it Tangy Lemon Bread.

100g softened butter
1/2 cup brown sugar
1 lemon finely grated rind
2 small eggs (1 large egg), lightly beaten
4 tablespoon lemon juice
2 1/2 cup all purpose flour (I used low-gluten flour), plus extra for dusting
1 teaspoon baking powder
1 tablespoon milk

In a mixing bowl, place the butter, sugar, and lemon. Beat together until light and fluffy. Alternately add the egg and lemon juice to the mixture, beating well between each addition.  Sift in the flour and baking powder, then add the milk to form a smooth dough. Turn the dough onto a floured surface, place the dough in a bread mold and bake for 30 - 45 minutes for 170°C (375°F).

I'll try to this again using all purpose flour next time :), instead dividing into a small pieces like rolls.

Rice Cake

A Filipino favorite rice cake (bibingka), usually with fresh grated coconut and cook in a banana leaf-lined clay mold. This is just  ready mix  in a 250g box, and I baked it in an oven toaster.

250g rice cake mix
3 eggs
50g melted butter
1 cup water
1/2 cup sugar

Heat oven at 190*C. In a bowl, beat eggs. Combine rice cake mix, water, sugar, and melted butter. Mix until well blended. Pour the batter on prepared pans. Bake for 15 minuts or until done. Brush the surface with butter. Sprinkle wit grated coconut. Serve hot.

Creamy Chocolate Brownies

Here's my first baked for 2011. Once again, no exact recipe. The ingredients I used were the only available in my kitchen. I added crumbled oatmeal and mixed nut cookies (my sister made them), and used Godiva dark chocolate powder. Instead of milk or buttert milk, I used all purpose cream.

1 cup cake flour
1/2 cup cocoa/chocolate powder
1/2 teaspoon baking soda
100 g butter
250 ml all purpose cream
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 cup crumbled oatmeal cookies

In a bowl, whisk mix flour, cocoa powder, and baking soda.

In a mixture, whip the butter, sugar, and vanilla. Add egg and mix up well. Slowly add half of the he dry ingredients, and half of cream. Continue adding the dry ingredients and the rest of the cream. Make sure all the ingredients are well mixed. Add the crumbled oatmeal, whisking with spatula.

Fill the pan with batter, and bake for 35 - 40 minutes in 180°C (350°F). Let it cool, cut into a small square.
