Sauteed Bok Choy


I bought this Bok Choy SM Hypermart imported from Taiwan. Just an ordinary sauteed in vegetable oil with chopped garlic and seasoned with salt.

Simple Sauteed Beansprout

The cheapest and maybe healthiest side dish for today. I was passing by the Traditional Market and bought a bunch of beansprout for only NT$10 (3 cents). I sauteed it with leeks, seasoned with salt and pepper, dropped a little bit of soy sauce and that's it!

Green Papaya Salad

When I presented this papaya salad to my friends, one of them asked me why I added cherry tomatoes. I told her to balance the sour of lemon and passion fruit. This is just to show that I made this on my own taste. If vinegar will be added here, I would definitely not eat it. ) I have this papaya in the refrigerator for over a week, that's why it turned out orange, it's almost ripe :)

2 cups green papaya, finely shredded
2 tablespoon peanuts, toasted
6 pieces cherry tomatoes, sliced
6 pieces green beans, sliced

For the dressing: Blend the following
2 cloves garlic
2 pieces shallots
1 piece chili
1 teaspoon salt (or fish sauce)
1 tablespoon brown sugar
2 tablespoon lime juice
1 passion fruit juice - I didn't remove the seeds :)
Place the shredded green papaya, green beans, and cherry tomatoes in a  salad bowl. Drizzle with dressing. Toss until well-mixed. Top with toasted peanuts.

Boiled shrimps and parsley can be added. Enjoy!
I love this, I will definitely make again :)

Vietnamese Vegetarian Stir-Fried Vermicelli

Previously I made Vegetarian Spring Roll,  this time I thought of wrapping the noodles in Vietnamese Spring Roll Wrapper.  I made this for my Buddhist classmate last Thursday. What a relief, I don't need to bring plates and chopsticks. I'm glad he likes it, even some others tried it:)

1 box tofu, julienne
3 cloves garlic, chopped
3 shallots, chopped
1/2 carrot, julienne
3 mushroom, julienne
bunch of beans sprout
some vermicelli, soak in cold water
light soy sauce and pepper to taste
olive oil

Heat oil, fry the tofu until golden brown. Set aside. In the name pan, saute garlic and onion until cook. Add carrots and mushroom, season with soy sauce and pepper. Add tofu and beansprout, and vermicelli and keep mixing until all the ingredients are combined.

Quickly dip the wrapper in water, place on a plate (flat). Add 2 spoonful of mixture, fold one side of the wrapper. Then fold left and right sides, roll forward to wrap the mixture. Ready to eat!

I tried frying it and here's the outcome. I won't recommend frying, the noodles absorbed so much oil.

Roasted Eggplant and Bell Peppers


A very simple side dish or snack taken from South Beach Diet Recipe, but I added sesame dressing and I omitted the onion.

MyMeatlessMondays1 eggplant, peeled, halved, and sliced
1/2 red bell pepper, cut into thick strip
1/2 yellow bell pepper, cut into thick strip
1/2 green bell pepper, cut into thick strip
1 small onion, sliced (omitted)
2 tablespoon extra-virgin olive oil
some fresh basil (optional)
Preheat the oven (toaster) to 220°C . Place the eggplant, peppers, and onion (optional) in a baking dish. Drizzle with the oil. Bake in for about 20 minutes or more, basting regularly.

Arrange the vegetables on a serving dish and garnish with fresh basil and pour some dressing that you like.

Sweet Potato Balls

I saw this recipe in my cookbook "Taiwan Night Market Snacks", and I thought to give it a try. I couldn't find sweet potato starch in the supermarket, instead I used tapioca starch. I don't know if I did it right, the outcome is sort of chewy (knowing tapioca is one of the ingredients in making bubble tea).

Here's the recipe:
sweet potato 500 g (2 pieces)
sweet potato starch 400 g ( I used tapioca)
brown sugar (I used 1 cup)

Cut sweet potato into cubes. Steam until soft and pound it in puree.

Add sugar and sweet potato starch, whisk well to blend. Knead into long cylinder; cut for about 1.5 cm cubes.

Deep fried sweet potato cubes in oil for about 30 seconds; stir rapidly and press cubes lightly to make cubes into balls. Transfer to plate and ready to serve.

Making Soybean Milk

I used to buy 1 cup every night after work! Now that I know how to make, I guess the lady selling soy milk will be missing me! :)

Making soy milk is not that difficult after all! More and more people are drinking soybean milk for health purposes. I read this site giving information about soy milk.
  • it contains only vegetable protein
  • it contains no lactose
  • it contains no hormones
  • it reduces cholesterol
  • fewer people are allergic to it
  • it does not cause insulin dependent diabetes
  • it is rich in isoflavones (secondary vegetable substance)
Trying to make the easiest way, here's what you need:
                 

1/2 cup of soybean, wash and soak it in 1 cup of water overnight.














Drain the water and  place the soybeans in a blender.
Add 4 cups of water and blend it into a fine pulp.














Use the muslin bag (or strainer) to filter the soybean mixture,
separating the residue from the soybean milk.














Boil the soy milk fro about 3-5 minutes until it's cook.
Sweetened with sugar, maybe chocolate or anything desires.

Garlic Eggplant

Sometimes I wonder how Taiwanese prepared simple dish but delicious like this garlic eggplant. Actually, garlic eggplant is easy to prepare, they serve it here as an appetizer or side dish. Just cut the eggplant into bite size and fry them in 2 tablespoon of olive oil. When the eggplant is cook, set in a dish.

Sautee chopped 5 cloves of garlic and 1 chili pepper in a sesame oil (or any oil), add 2 tablespoon thick soy sauce and half teaspoon of sugar. Let it boil and pour on top of the eggplant.

Optional: If you like, no need to sautee the seasoning. Mix garlic, chili pepper, sesame oil, soy sauce, and sugar well. Pour on top of the eggplant and sprinkle chopped coriander.

Serve it with rice and fish, like what I did below!

Vegetarian Spring Roll

After the Palm Sunday Mass, our sisters in the church gave us spring roll wrapper (lumpia wrapper). Since it's Holy Week, It' my choice  not to eat any meat  and seafood the whole week.

 In our language we call that "lumpiang shanghai". There are different ways how to make them. I started to make vegetarian spring roll consist of fresh tofu and beansprout as the main ingredients.I think any vege will do...I didn't use any preservative flavoring, except for salt and pepper. I don't think I need to make sauce either, because it's already tasty! The ingredients are - fresh tofu - beansprout -carrot -celery -onion -garlic -salt and pepper -chili powder (optional) -lumpia wrapper -cooking oil (I used canola). I fried the tofu first, followed by garlic and onion. I added carrots and beansprout., put some seasoning, set aside until it's cool! Spread the spring roll, put at least 2 tablespoon of cooked vegetables, wrapped it... I made 8 pieces. Heat oil again, wait until the oil is hot enough, put the spring roll, roll them to cook evenly. If the wrapper turn brown, then it's cooked! Crunchy!!!

Korean Cucumber Salad

cucumber
(Oi Muchim)

Ingredients:

3 smal/thin cucumber

1 tsp garlic powder

1 tsp salt
1 tsp sugar

1 tsp vinegar/or lime

1 tsp sesame oil

1 tsp chili flakes

1 tsp sesame seeds

2 stalk green onion

Procedure:

Slice the cucumber into 1/4 pieces.

Chop the 2 green onions

Combine all the ingredients into a bowl and mix.

Serve with any dish or eat as a snack.

Beansprout Salad

Bean Sprout (Korean Dish)
A Korean side dish, but i wrap it in a crepe as a meal.
Beansprout Rolls
Ingredients:
1 pack of beans sprout
2 stalk green onion
1t sesame oil
1T sesame seed
1/4 t sugar
1/4 t garlic and pepper powder

Boil the sprouts for 5 minutes.
Rinse with cold water. Drain.
Add the ingredients.
Mix.
