The other day, I made Mango and Coconut Cupcake and I still have a cup of puree from the mango I bought. If banana is so good in bread, why not mango... here's the result, I would say this is Mango Bread in a Cup. It looks hard on top, but I like it that way. I really lessened the butter and sugar this time.

Mango Coconut Cupcake
I went to supermarket today and saw huge over riped mango for only NT$69 (originally it was NT$120, almost US$5), and I thought making something bake out of it. After removing the black part and blended, I got 2 cups of mango. I used 1 cup to make this Mango Coconut Cupcake, and I freezer the left-over for future baking. I also used cake flour, and added dried coconut and turned out the tops are frosted and a little bit chewy. The smell of mix mango and coconut is so good!

Fresh Mango Pudding
I made this today and shared with friends in the church. I didn't add sugar anymore since Taiwan Mango is as sweet as sugar. No offense, I still prefer Philippines Mango, the mixture of sweet and sour.
Ingredients are shown above:
3 cups pureed mangoes, 1 cup evaporated milk,
1 cup hot water, 2 envelopes (20 grams) unflavored gelatin,
fresh mango slices for garnishing

Add gelatin in hot 1 cup hot water until dissolve; set aside. In a large bowl, mix the mango puree and evaporated milk. Add the gelatin mixture into the mango mixture. Mix well. Pour the resulting mixture into the mould and chill to set.
Garnish with fresh mango slices on top.
Note to serve:
Turn the mould onto a serving plate to remove the mango pudding, then garnish will fresh mango slices.

Green Mango Shake
My favorite shake!
It's very refreshing specially this summer!
1 cup green mango, cubed
1 cup water
some crushed ice
1 tablespoon honey
In a blender, combine green mango and water.
Process until smooth.
Pour in honey.
Add crushed ice.
Blend again until smooth.
Chill further before serving.
Sugar syrup can be used instead of honey.
To make sugar syrup, just boil brown sugar in water.
Set aside and cool.
