Simple Carrot Cupcake
The first time I tried eating carrot cake/bread was my sister's home-baked. She used to make a lot and give to friends as a gift on Christmas. I made this carrot cupcake today, definitely not the same as hers. This is just simple one.

Mango Coconut Cupcake
I went to supermarket today and saw huge over riped mango for only NT$69 (originally it was NT$120, almost US$5), and I thought making something bake out of it. After removing the black part and blended, I got 2 cups of mango. I used 1 cup to make this Mango Coconut Cupcake, and I freezer the left-over for future baking. I also used cake flour, and added dried coconut and turned out the tops are frosted and a little bit chewy. The smell of mix mango and coconut is so good!

Cream Cheese Brownie Bites

I'm trying to use all the brownie mix I have before the heat begins. I don't think I would stay in the kitchen to bake by then. This is second to the last pack and I decided to make into mini-cupcake with cream cheese frosting and decorated with colorful candies to catch up Mayflower season. I still have to improve the process of making frost. I admit, I'm having a hard time when it comes to frosting.

Banana Chocolate Brownies
The premixed brownies are too sweet for me, that's why I find ways how to improve the taste. This time I added one cup of whole wheat flour, additional water and oil to the original instruction from the box. For final addition, two mashed bananas :)

Banana Cupcake
I've been baking a lot of Banana Bread lately, for a change I made banana cupcakes. The recipe is similar in making banana bread but this time I made sure that the bananas were really riped. It really made a lot difference!

Coconut Cupcake
After Vietnamese Coconut Tarts, this time it's Thai Style Coconut Cake adapted from Your Favorite International Cuisine Cookbook by Noel Young. I like it better when it's bake in cupcakes the way I did on top photo. It's easier to bake! I used wheat flour and brown sugar.
1 cup brown sugar
1/2 teaspoon salt
100g butter (1 stick), melted
1/2 cup coconut milk
1 cup wheat flour (or all-purpose flour)
2 tablespoon baking powder
For toppings:
thick coconut cream
toasted dessicated coconut (or coconut flakes
In a bowl, beat the egg whites thoroughly; set aside. In another bowl, mix the sugar, salt and egg yolks, beat well. Add flour and baking powder to the egg mixture. Fold in egg whites, and beat thoroughly. Place in a pan and bake in pre-heated oven for 175°C (350°F) until the top is golden brown. Remove from the heat, prick some holes then top with coconut cream and sprinkle with dessicated coconut.
