Jackfruit is a kind of tropical fruit that looks like Durian, but bigger than Durian. It's yellow inside and sweet when it's ripe. I remember in the place where I grew up, we had a tree and it had lots of fruits down to the ground. I'm not fun of eating jackfruit, but I usually made them into candies by cooking with condensed milk. I bought a can of jackfruit in syrup at Vietnamese Restaurant here in Taipei, and here's the catch it's made in Thailand. Filipino made the candies and International Classmates around the globe tasted them. This is what I call "a taste of culture" :) This is similar to Yema (Custard Candy), but I didn't add any eggs that made into just Simple Jackfruit Candy.

Chocolate Chip Walnut Bars

A big hit! Just by looking at it you can tell it's really good and what more if you have a piece in your hand. First time to make bars and I'll make again and again, changing or adding ingredients more next time. This Chocolate Chip and Walnut Bars is dapted from my cookbook Hmmm Baking. I don't have a square baking sheet, but I managed to cut them in bars. I used bitter-sweet chocolate chips and didn't add much sugar.

Fresh Mango and Walnut Bread
The other day, I made Mango and Coconut Cupcake and I still have a cup of puree from the mango I bought. If banana is so good in bread, why not mango... here's the result, I would say this is Mango Bread in a Cup. It looks hard on top, but I like it that way. I really lessened the butter and sugar this time.

Walnut-Mallow Brownie Bites
For today I made another creation of my last pouch of brownies mix. My friends enjoyed eating this brownies with walnuts and melted marshmallow on top. Good thing about marshmallow in here is not that sweet. It's not a new recipe to everyone, but I made it for an experience and I think kids will love it . I also added more water to the mixture, it came out like soft cake. The soft cake, crunchy walnuts, and chewy marshmallow made it really taste good.

Banana Walnut Choco-Chip Cookies
It's second time around, much improved than my first Banana Chocolate Chip Cookies. The process is just the same except choco-chips met walnuts and they really blend together. As I mentioned, it's just like eating a piece of banana bread. This time it's chewy and crunchy plus much sweeter.
