The first time I tried eating carrot cake/bread was my sister's home-baked. She used to make a lot and give to friends as a gift on Christmas. I made this carrot cupcake today, definitely not the same as hers. This is just simple one.
cup all purpose flour
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup chopped walnuts
2 cups grated carrots
2 eggs
1/2 cup canola oil
1/4 cup buttermilk (I used milk + lemon juice)
In a bowl, whisk the flour, sugar, baking soda, salt, cinnamon, and walnuts. Toss the grated carrots until incorporated with other dry ingredients. Set aside.In a mixer, beat the eggs until fluffy. Slowly add the oil until mix in with the egg. Add the dry ingredients and continue mix until all the dry ingredients mixed.
Place in a prepared baking muffin and bake for 20-25 minutes in the pre-heated oven to 180 ̊C(350 ̊F). Let it cool in a rack completely.

these look fantastic...and although simple--i can see how moist they are. i would totally make them less healthy with a nice glob of cream cheese frosting :) thank you for sharing with tuesday night supper club!
