Baked Creamy Mashed Potato

I watched this recipe in podcast a long time ago, it's from Hubert Keller's show. He doesn't really show the exact ingredient he's adding, so I just adapted the way he made it. I only used  fork and wooden spatula in doing all the mashing and mixing of ingredients.

7 small potatoes, boiled, peeled,  and mashed
100g cream cheese (I used light cream cheese)
1/4 cup fresh milk (or more)
1 egg, beaten
salt and pepper to taste

small onion, thinly sliced
1 tablespoon butter

In a bowl, mix the potatoes, cream cheese, fresh milk, and egg. Seasoned with salt and pepper. Place the mashed potato in a coated butter baking dish. For the toppings, mix melted butter and onion, seasoned with salt and pepper. Place on top of the mashed potato.

Cover the baking dish and bake for 30 minutes in  170°C (375°F). Remove the cover and bake for another 5 minutes.

Cream Cheese Triple Chocolate Brownies

I used triple chocolate brownie mix given in our church, I'm telling you that mix is too sweet ( in my opinion). Anyways, instead of the usual prepared brownies I thought of adding cream cheese but lessen the sugar added. I'm satisfied with the results, the cake itself is soft and smooth.

1 packed of brownie mix (for 16 bars)

8 oz cream cheese
1/4 cup brown sugar (diluted in hot water)
1 egg, lightly beaten
1 teaspoon vanilla extract

Prepare the brownie mix as per directed in a package. Reserve some for toppings later. In a mixing bowl, beat the cream cheese, sugar, egg, and vanilla until smooth and fluffy. Spread the brownie mix in a prepared molder. Cover the brownie mix with cream cheese. Spread the left over brownie mix on top of cream cheese. Bake for 30 - 45 minutes for 170°C (375°F).

I made these into a small cupcake molder.

Creamy Chocolate Brownies

Here's my first baked for 2011. Once again, no exact recipe. The ingredients I used were the only available in my kitchen. I added crumbled oatmeal and mixed nut cookies (my sister made them), and used Godiva dark chocolate powder. Instead of milk or buttert milk, I used all purpose cream.

1 cup cake flour
1/2 cup cocoa/chocolate powder
1/2 teaspoon baking soda
100 g butter
250 ml all purpose cream
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 cup crumbled oatmeal cookies

In a bowl, whisk mix flour, cocoa powder, and baking soda.

In a mixture, whip the butter, sugar, and vanilla. Add egg and mix up well. Slowly add half of the he dry ingredients, and half of cream. Continue adding the dry ingredients and the rest of the cream. Make sure all the ingredients are well mixed. Add the crumbled oatmeal, whisking with spatula.

Fill the pan with batter, and bake for 35 - 40 minutes in 180°C (350°F). Let it cool, cut into a small square.
