Peppered Beef Cold Noodles


Bento #08 ~ Peppered Beef Cold Noodles

It's peppered beef spinach cold noodles. I read so much about cold noodles and pasta salad since I would like to know the difference between noodles and pasta. Actually, I think there's not much difference. Mostly in Asia, we're just used to call noodles and in Western it simply pasta. Anyways, as usual  this is an easy way to prepare ahead of time, maybe at night and just place it in the chiller, the following day it's ready to eat.

Cold Noodles with Left-Over Beef

Almost the same as what I posted last time Cold Noodles with Beef, Vietnamese Style. This cold noodle is one of my favorite! I specially make this kind if I have left-over steak. All what I do is to slice the beef, boil noodles, chop some green onion and fresh tomato, mince garlic. Add salt and pepper + Italian seasoning. Add a drop of extra-virgin olive oil, mix and another meal is created!

Sometimes, I also add fresh chopped basil leaf! Yum!

Filipino Beef Stew (Caldereta) 2


Another way to cook Filipino Beef Stew, a lot different from my first post Filipino Beef Stew 1. The recipe is from the June Edition of Filipino Food Magazine. In this recipe, almost all the ingredients are fresh.

1/2  kilo beef chunks
2 tablespoons olive oil
4 cloves garlic, minced
1 large onion, minced
1 red bell pepper, diced (omitted)
1 red green pepper, diced
1 hot chili pepper, minced (optional)
2 large fresh tomatoes, diced
1 cup chicken liver, poached and mashed
1/2 cup water (or beef stock)
some grated cheese
some green olives

In a pan, brown the beef pieces in hot olive oil. Remove the beef from the pan and set aside. In the same pan, saute the garlic and onion until soft. Add red and green pepper, tomatoes, and chili pepper. Saute for few minutes. Put the beef back, add mashed liver and stock or water. Simmer for at least 1 hour or until the beef is tender. Add cheese and olives. Continue to simmer until the sauce thickens.

Served on top of steamed rice. I served it with blanched broccoli.

Peppered Beef Roll-Ups

This snack is adapted from SBD Recipes, known as Turkey Rolls-Ups. Originally, a slice of turkey will be place on a lettuce leaf and spread with Cilantro Mayonnaise, fold in tight like a cigarette roll. I made a twist!

2 slices of peppered beef
some asparagus
cilantro mayonnaise (cilantro is omitted)

Pan grill the asparagus. In a plate, place 1 slice of beef, place asparagus on top and spread mayonnaise. Fold into a tight roll.

How to make (NON-) Cilantro Mayonnaise (from SBD Recipes)
non-cilantro mayonnaise

1/2 cup reduced-fat mayonnaise
1/2 cup loosely packed cilantro leaves (omitted)
2 teaspoon fresh lime juice
1 teaspoon light soy sauce
1 small clove garlic

Place the mayonnaise, cilantro, lime juice, soy sauce, and garlic in a blender (food processor). Blend until smooth.

(I didn't use blender, I just mix with fork!)

Enjoy!

Note: Peppered Beef may be substitued for the Ham.
Cilantro Mayonnaise can be used as a dip instead of a spread.

Marinated London Broil

I don't know which part of beef I used because I sliced it when I bought it that supposed to be used in other recipes. The ingredients I used in marinating is taken from SBD Recipes. I like my steak well-done unlike in the recipe which is medium-rare. I used oven toaster, it's a little bit longer to cook, grill pan can also use for those in a hurry. All the herbs should be fresh, but I only used dried.

1 tablespoon extra-virgin olive oil
2 tablespoon dry red wine
1 cloves garlic, minced
1/2 teaspoon dried parsley
1/2 teaspoon dried oregano
1 bay leaf
dash of ground black pepper
2 pieces steak

In a small mixing bowl, whisk together the oil, wine, garlic, parsley, oregano, bay leaf, and pepper. Place the steak in a deep bowl and pour on the marinade. Turn once to coat in a sides, cover, and refrigerate for at least 4 hours or overnight.

When ready to serve, preheat the broiler. Discard the marinade. Broil the meat about 5 minutes on each side or until cook. Cut the meat into thin or bite size. Serve warm or cold.

Red Wine and Pepper Steak

What I love about learning to cook is to know more about  herbs! To be frank, I don't know what rosemary is! Taken from the book The South Beach Diet, I love this Cracked Pepper Steak even though I only used extra-virgin oil and didn't add butter/spread. It's easy to prepare! When I bought the steak, the red wine and pepper sauce packet is already added so I didn't add any red wine like the original recipe.

1 tablespoon cracked black pepper
1/2 teaspoon dried rosemary
2 beef tenderloins ( I used 5 small pieces)
1 tablespoon extra-virgin olive oil
1/4 cup dry red wine
dash of salt (optiona)

Combine the cracked black pepper and the rosemary in a large bowl. Coat both sides of the steak with the mixture. In a pan, heat oil and cook the steak over medium to medium high heat until the steak is cooked the way you prefer it. ( I like mine medium well). Remove the steak from the pan and cover to keep them warm. Add the redwine sauce (or brandy) to the pan and bring to a boil over high heat, scraping particles from the bottom of the pan. Boil until the liquid is reduced to half. Spoon the sauce over the steaks.

Bitter Gourd and Beef


I used to buy white bitter gourd and it's not bitter at all. This time, I bought the green and I didn't marinate it with salt after slicing, it's really bitter!
1 big bitter gourd
100g beef, sliced
1 tablespoon soy sauce
1 teaspoon sugar
1 tablespoon cornstarch
1 teaspoon water
1 small red pepper
salt and pepper to taste
sesame oil

Marinate the beef with soy sauce, sugar, cornstarch, and water for 10 minutes. Wash bitter gourd, cut and shred. Heat 2 tablespoon of oil, stir fry bitter gourd. Add light soy sauce, sprinkle with water, sugar, and salt (optional). Set aside. Heat 1 tablespoon of oil, stir fry beef until cook, add bitter gourd. Keep stir fry, add red pepper, sprinkle water (if it's too thick) and sesame oil. Turn off the heat and serve with rice.

Filipino's Beef Stew (Kaldereta)

Beef Caldereta or Beef Stew (Filipino Style)
1 kilo beef, cubed
6 hot dogs, sliced diagonally
2 heads garlic, minced
1 small pack tomato sauce
6 potatoes, quartered (I used 4)
1 medium carrot, sliced
1 red pepper, sliced and pitted
2 tablespoon liver spread (I used 1 small can)
salt and pepper to taste
small pack of kaldereta mix (optional)
1/4 cup grated cheese
1 cup sweet peas
oil fr frying
Marinate beef overnight in a mixture of 1 tablespoon salt,
1/4 teaspoon black pepper, and 1 head of garlic.

In a saucepan, heat oil and fry meat until slightly brown.
Set aside, saute chopped onion and 1 head of garlic.
(You can also remove the beef first) Pour in tomato sauce.

Mix beef and add hot dogs. Add enough water to cover the meat.
Simmer until the meat is tender.

Add potatoes, carrots, and red pepper. Stir. Add liver spread,
instant kalderta mix (optional), sweet peas, grated cheese, salt and
pepper to taste. Cook until the sauce is thicken.

In the Philippines, we called it "Kaldereta" or Caldereta", comes from the Spanish name "Caldera" (cooking pot). In other words stewing meat in a totally immersed liquid in a pot. There are different ways how to make Caldereta and I never been cook this dish for others, so this time I'm adapting Christie Lee's Pagkaing Pinoy for our Mother's Day potluck get together in St. Francis Church (Xizhi, Taipei County). I followed the recipe except for kaldereta mix and the liver spread. I added one small can instead of 2 tablespoon of liver spead. I'm just thinking if I will not add all of the liver spread, no one will eat it!

Bottlegourd and Beef Noodles

I've been trying  to find recipe about bottle gourd and beef recipe, unfortunately I couldn't find one. A friend of mine in YouTube has the same ingredients(beef, bottle gourd, misua) and she made it into soup. I got an idea from her, here's what I did:
1 small bottle gourd (upo), sliced into bite size
150 g beef, sliced
1 large tomato, sliced
1 small onion, minced
2 cloves garlic, mince
1 red chili pepper (optional)
salt and pepper to taste
pinch of Italian Seasoning
any noodles ( I used buckwheat)

Bring water to boil, cook noodles. Set aside. In a pan, saute garlic, onion, chili, and tomato. Add beef, season with salt and pepper and mix well. Add bottle gourd and a little water if it's too dry. Cover with a lid to cook further. Add noodles and mix.

Simple Beef Curry Soup

Simple Beef Curry Soup
My first time to cook curry and it turned out fine. I like it! These are the ingredients I used: ( sorry, I don't have exact measurement)
-beef cut into cubes
-chopped onion
-chopped galic
-sliced ginger
-potato cut into cubes
-2 cups of water (broth optional)
-curry powder
-salt to taste
-lemon juice (just squeeze)
-olive oil (butter or margarine)





What I did:
Heat 2 tablespoon of olive oil, sauteed beef cubes, garlic, and onion.
I added water and curry powder. Cooked it for 30 minutes in a low heat, until tender. Followed by adding potatoes, lemon juice, and salt to taste. Simmer it until the potato is cooked. Serve.

Shredded Beef-Green Pepper

(Chinese Style)

Shredded Beef & Green Pepper
Ingredients:
200 g beef
2 green pepper
ginger shred

Seasoning (1) 2T light soysauce, 2T water, 1/2 T cornstarch
Seasoning (2) 1/4 t salt, 1/4 t sugar

Shred the beef 3-4 cm, marinate in seasoning (1) for 30 minutes.
Cut and shred the green pepper.
Heat 3T of oil to stir-fry beef over high heat, set aside.
Stir-fry green ginger and green pepper with 1T oil,
add a little water, salt, and sugar, stir evenly.
Add beef in, stir-fry evenly.
Serve.
