1 large sweet potato, peeled and cut into very thin slices
2 cups iced water
oil for deep frying
sugar for dusting
Soaked the sliced sweet potato in iced water for at least 30 minutes.
Drain and allow to dry on paper towels.
Heat the oil in the frying pan. Deep fry sweet potato until crisp.
Drain on paper towels. Sprinkle with sugar before serving.

I am crazy about purple sweet potatoes but usually eat them steamed or boiled. This sounds like an even better way to munch on them. Thanks for linking this up to Sweets for a Saturday.
Finally I have found the recipe for these! I love sweet potato chips! They're much better (and hopefully healthier) than the regular potato ones but I only had the store bought chips. I can't wait to make these myself :) The photo is mouth watering.
I haven't seen one of those purple kamote in a long time.
