Happy Chinese New Year or Happy Lunar Year!
In Lunar calendar, literally Chinese New Year is the beginning of Spring. In my place where I live, candies welcome the arrival of Spring. To welcome the spring, I made coconut cookies and added some choco-candies to make them colorful.
2 cups all purpose flour
2 teaspoon cornstarch
100g softened butter (1 stick)
1 cup brown sugar
1/2 cup dried coconut
1 egg
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
some choco-candies
Preheat the oven about175 ̊C(350 ̊F). Prepare the baking sheet lined with parchment . In a bowl, cream together butter and sugar until smooth. Add egg and vanilla and blend in. Stir in the flour, cornstarch, baking soda, salt, and coconut. Scoop tablespoons onto the parchment sheet, place the choco-candy on top of each. Bake for 8 to 10 minutes or until golden brown. Let cool slightly and enjoy.
