I'm trying to use all the brownie mix I have before the heat begins. I don't think I would stay in the kitchen to bake by then. This is second to the last pack and I decided to make into mini-cupcake with cream cheese frosting and decorated with colorful candies to catch up Mayflower season. I still have to improve the process of making frost. I admit, I'm having a hard time when it comes to frosting.
1 brownie mix
1/3 cup canola oil
1/4 cup water
1/4 cup milk
1 egg
Preheat the oven to 180 ̊C(350 ̊F). In a mixing bowl, mix all the ingredients until incorporated. Scoop the batter and place on the prepared baking sheet and bake for 10-12 minutes. Transfer the brownies to wire rocks to cool completely before frosting.
For Frosting:
8 oz cream cheese
1 stick melted butter (1/2 cup)
1 cup powdered sugar
1 teaspoon vanilla
2 tablespoon milk (optional)
Candies (optional)
Beat the cream cheese and butter until light and fluffy. Gradually add sugar, vanilla, and milk and keep beating until smooth. Place the frosting in a piping tube/bag. Pipe on top of the cupcakes. Place the candies on top of the icing (optional).
Enjoy!
