Dough Preparation:
2 1/2 cups flour (I used 1 cup all purpose flour, 1 cup wheat flour, and 1/2 cup whole wheat flour)
2 1/4 teaspoons dry yeast
1/2 teaspoon salt
1 cup warm water
1 tablespoon olive oil
To make the dough, combine flour, dry yeast, salt, water, and olive oil in a mixing bowl. Using electric mixer, knead until the dough is elastic. Place the dough in the floured surface. Cover the dough with clean towel to let it rise for about an hour, or until it double in size.
Remove and punch the dough, cut into 4 and roll into round pieces. Let rest for another 15-30 minutes. Remove the dough to work and knead in the floured surface. Place the rest of the dough in the refrigerator.
Sauce Preparation: 1 cup tomato paste, 1 large chopped tomato, 2cloves chopped garlic, 1 tablespoon chopped onion, 1 tablespoon chopped fresh basil (if using). Saute onion, garlic, and tomato. Add Italian seasoning and pepper. Add a pinch of sugar, salt, tomato paste, and a cup of hot water. Let it simmer until thicken.
In here I made Simple Fresh Tomato and Basil Pizza.Shape the dough in the baking sheet, spread the pizza sauce all over. Spread mozzarella cheese, place the fresh tomato and basil. Spread some mozzarella cheese on top. Bake in the oven for 15-20 minutes in 190 ̊C(375 ̊F).
