Chicken Adobo (Japanese Style)

Japanese Style Chicken Adobo
Previously I cooked Chinese Style Adobo , today I made it into Japanese Style Adobo. The only difference is the marinade I used, and the way I cooked. The chicken looks like Teriyaki, but chicken turns out soft and tasty! I didn't measure the sauce, just prepared the marinade to my taste.

500g chicken (with bones)
2 stalks green onion, sliced
3 cloves garlic, crashed
1 red chili pepper (optional)
1 small ginger, sliced
soy sauce (I used light soy sauce)
sake or Japanese vinegar
salt (optional)  and pepper
olive oil

In a bowl, mix all the ingredients, add the chicken and marinade overnight. In a pan, heat oil and stir-fry the chicken without the sauce. Add the sauce, cook until the sauce thicken, remove the onion and ginger.  When the chicken is about to dry, add oil again and stir-fry until no more sauce.
Served with steam rice. Yum!
