Honey and Lime Fried Chicken


This is supposed to be  baked honey chicken, I made Sweet Potato Fries and I decided to use the same canola oil for this chicken. From the color, it really shows it has sweetness since it's sticky. A mixture of sweet and sour in a fried chicken.

Tuna Sandwich and Blanched Vegetables

I baked the whole wheat bread creating into fun shaped like flowers, hearts, and even bears. I used tuna in water fresh from the can, I seldom eat canned food and if ever I have to add lots of vegetables to the meal. In here I used steamed okra wrapped in fish cake and baby corn as side dish. I also have mixed salad and seedless grapes for dessert.

Weekend Food Tour: Come On Italy St.


Real Italian Taste but a little bit pricey, I guess because they used dried tomatoes in all their meals knowing that dried tomatoes are hard to find in this town. The food is really good, I enjoyed everything until to last bite.

Chocolate Chip Walnut Bars

How many hearts can you see?
A big hit! Just by looking at it you can tell it's really good and what more if you have a piece in your hand. First time to make bars and I'll make again and again, changing or adding ingredients more next time.  This Chocolate Chip and Walnut Bars is dapted from my cookbook Hmmm Baking. I don't have a square baking sheet, but I managed to cut them in bars. I used bitter-sweet chocolate chips and didn't add much sugar.

What can I say, I love shrimp! But I cannot eat a lot, I have occasional allergy with it. Anyways, I can't believe this is the 11th Bento I made. I'm enjoying creating and snapping (cooking and capturing) a lot, sometimes when I look around my mind is working with what to prepare next...Although my Obentos are made just for me and I haven't tried making for kids with all those characters, maybe soon...

Fresh Mango and Walnut Bread

The other day, I made Mango and Coconut Cupcake and I still have a cup of puree from the mango I bought. If banana is so good in bread, why not mango... here's the result, I would say this is Mango Bread in a Cup. It looks hard on top, but I like it that way. I really lessened the butter and sugar this time.

Sweet Fresh Milk Bread

This is one of the posts disappeared last week! I adapted the recipe from Fall in Love with Baking. Next time I'll be making this into rolls since I love the brown part. The bread is soft and it smells so good. I brought it in the church for food tasting and my friends said it's tasty and creamy!

Mango Coconut Cupcake


I went to supermarket today and saw huge over riped mango for only NT$69 (originally it was NT$120, almost US$5), and I thought making something bake out of it. After removing the black part and blended, I got 2 cups of mango. I used 1 cup to make this Mango Coconut Cupcake, and I freezer the left-over for future baking. I also used cake flour, and added dried coconut and turned out the tops are frosted and a little bit chewy. The smell of mix mango and coconut is so good!

Another  healthy complete meal, but the difference now is I used purple rice (I really don't know how to call this, maybe wild rice?). I have here rice, top with egg, shrimp, tofu, cabbage, peas, and cherry tomatoes.

Simple Potato Omelet

Bingo! One potato and two eggs, that all I have in the kitchen. I grew up eating this potato omelet. Sometimes we ate it for breakfast with fried rice or inserted it in a pandesal (Filipino rolls), sometimes we cooked this at dinner along with left over food from lunch. Now it's my turn to cook it and eat as it is. I have no one to share with :)

It's peppered beef spinach cold noodles. I read so much about cold noodles and pasta salad since I would like to know the difference between noodles and pasta. Actually, I think there's not much difference. Mostly in Asia, we're just used to call noodles and in Western it simply pasta. Anyways, as usual  this is an easy way to prepare ahead of time, maybe at night and just place it in the chiller, the following day it's ready to eat.

Walnut-Mallow Brownie Bites

For today I made another creation of my last pouch of brownies mix. My friends enjoyed eating this brownies with walnuts and melted marshmallow on top. Good thing about marshmallow in here is not that sweet. It's not a new recipe to everyone, but I made it for an experience and I think kids will love it . I also added more water to the mixture, it came out like soft cake. The soft cake, crunchy walnuts, and chewy marshmallow made it really taste good.

Spaghetti and Brocolli

 My two previous posts aren't showing, I guess it will take time before Blogger could figure/return them. Anyways, when I made this bento my husband told me it looks like for Halloween :) I thought of Jack-o-lantern. I'm a bit frugal here, I used the left over pizza sauce I made, chopped some peppered beef and added fresh basil and cheese. A great meal indeed!

I'm eating big time today! Kind of heavy food, but I think it's healthy in a way since it's a complete meal. How I enjoy using my do it yourself (DIY) rice molder and trying to fit all the food into the small lunch box. Good thing in my place where I live, I can buy small portion of everything. For instance, boiled egg, cooked rice, and even fresh fruits and vegetables.

Rice Nori, Tofu and Mushroom

 As simple preparation as this kind of meal in a busy exam week. Rice wrapped in Nori (dry seaweed) with tuna and mayonnaise, shredded with carrots. 


I have here fried egg tofu in olive oil,
sauteed mushroom seasoned with salt and pepper.

For the dessert, I bought egg pudding in the egg.

There's nothing better than having good and healthy breakfast in the morning! I'm trying to give it a try, hoping I can continue waking up early to prepare rather than buying from breakfast store. This took around 10 minutes since I prepared the peppered beef the night before. You can also use ham and other vegetables, and mayonnaise for the dressing. For the dessert, I have cherry tomatoes and cheese.

Whole Wheat Mini Bread

I'm making Bento (Boxed Meal) lately that's why I made bite size kind of bread to fit in my lunch box. I used my cookie cutter to shape the dough. I also used my hook mixer to do all the kneading. The bread is hard but chewy, sort of pizza bread the way I like it and a little bit sweet since I added cake flour. I think, I'll make this kind again and again.

Cream Cheese Brownie Bites

I'm trying to use all the brownie mix I have before the heat begins. I don't think I would stay in the kitchen to bake by then. This is second to the last pack and I decided to make into mini-cupcake with cream cheese frosting and decorated with colorful candies to catch up Mayflower season. I still have to improve the process of making frost. I admit, I'm having a hard time when it comes to frosting.

I found a box of Vanilla Cookie Powder in the supermarket, out of curiosity I bought it and added bitter-sweet chocolate chips. I couldn't really taste the vanilla flavor, maybe because I added a spoon of honey. But I ate three in one sitting with my hot green tea.

Hotdog Pizza Cups

I divided the pizza dough I made last week and this is my third time to create from it. We had a meeting and I want to bring pizza but it's not convenient since I don't have a box to carry. I decided to make the pizza into cups. The ingredients are simple, I also used my mini muffin pans to shape the dough.

Welcome to the world of Bento (Boxed Meal or Bian Dang /便當). There are two reasons why I started making Healthy Bento. First, I was  inspired by Cooking Gallery, then I thought of starting to eat healthy breakfast early morning since my class starts at 10am until 1pm. I always end up eating anything available for grab. I can prepare the food at night, place in the chiller, and ready to eat in the morning.

Banana Walnut Choco-Chip Cookies

It's second time around, much improved than my first Banana Chocolate Chip Cookies. The process is just the same except choco-chips met walnuts and they really blend together. As I mentioned, it's just like eating a piece of banana bread. This time it's chewy and crunchy plus much sweeter.

Glazed and crunchy on top, sweet and soft inside! No butter or oil for this recipe, I thought it wouldn't rise but lemon juice and honey I think made the trick. I just can't resist, I ate five in one sitting along with a cup of hot green tea. It's just a small portion anyways :)

WFT: Chikurin Tei Japanese Restaurant (2)

Last time, I posted Chikurin Tei Japanese Restaurant as part of my Weekend Food Tour. Since it's our second time to stay in Spring City Hotel in Beito (Hot Spring Capital of Taipei) and the dinner was included in ovenight package. This time, they had this Flora Style Creation in connection to Taipei International Flora Exposition that started November 25, 2010 and ended last April 25, 2011. Over all, they had seven servings from appetizer to dessert. We had additional menu given by the Chef for food tasting.
