Oven Toaster Baked Chicken

One time my friend asked me, "How to bake chicken without drying?" She said when she bakes, the chicken is hard and dry. There are different ways how to do it, but it's difficult for me knowing that I actually only using oven toaster. I tried this way and it works! The chicken is soft and juicy!

I used 2 chicken, 3 cloves garlic, salt and pepper to taste,  extra-virgin olive oil, rosemary (dry), and water. First I put rubbed the chicken with rosemary, salt and pepper. Pour olive oil on the bottom of baking pan, then place the chicken on top of the oil. Put garlic on top of the chicken, so the garlic will be roasted. Put a little bit more oil on top of the chicken. Then put a little water on the pan, to keep the chicken moist. Place in an oven toaster and bake the chicken for 30-40 minutes in 120°C (350 °F).

Here's the outcome, the chicken smells and tastes good! I made this chicken into Asparagus and Chicken Roulade.

Asparagus and Cheese Frittata

Another healthy way of cooking egg sent directly from my phone. Originally, the recipe is Asparagus and Mint Frittata but mint is not available instead I added mozzarella cheese. It turned out chewy!
2 eggs
mozzarela cheese
few asparagus, sliced
salt and pepper
1 tablespoon extra virgin olive oil

In a bowl, beat eggs, then stir in cheese, set aside. In a pan, heat oil and cook asparagus until tender. Season with salt and pepper, reduce the heat to low. Pour the egg mixture over the asparagus and cook for 5 minutes. When the mixture is nearly set but slightly runny on top, place the pan in the oven/grill and bake/grill for 1-2 minutes or until the top is set and just browned. Serve warm.

Diverse Chocolate Cake

I know there are lots of recipes about chocolate cake. This time, I would say I made my chocolate cake into diversity. Well, I used ready mix DIY (Do It Yourself) Japanese Chocolate Cake Mix. The box has 200g cocoa flour mix and 100g sugar. Then, the preparation and cooking was inspired from  Giuliano Gasali's Kitchen 05 Cookbook. The come out is more of brownies :) look!

200g chocolate flour
100g sugar
250g chocolate  (I used sweetened)
125g butter
6 egg yolks
6 egg whites
2 tablespoon rum (optional)
chocolate sauce (optional)

Here's the preparation:

 Sprinkle with icing sugar and cut into slices. Serve with the chocolate sauce (optional).

Serve with ice cream on top.

Serve on top of the ice cream.

Simply Sauted Spinach

Spinach as side dish, a very simple way to prepare!
2-3 cloves garlic, chopped
1 bundle spinach, sliced
1 tablespoon olive oil
salt and pepper to taste

Heat oil, saute garlic until fragrant. Add the spinach, season with salt and pepper. Saute until the spinach is cooked. Serve.

Weekend Food Tour: Din Tai Fung

It was hubby's birthday, I decided to treat him in Din Tai Fung Restaurant.
(That's him, browsing iphone while waiting)

We waited for almost an hour, but we onlystayed in the restaurant for 45 minutes.

Finally, we're seated and having our appetizer - mix of dried tofu and seaweed.

Din Tai Fung has branches around the world, famous with their Xia Long Bao
The best beef noodles I've tried in Taipei...
I love the texture of this cake...and not that sweet! Yum!

Japanese Style Fried Chicken

I thought this kind of fried chicken will turn out like hard and chewy but it wasn't. They're very soft and tasty! I marinated the chicken overnight with soysauce, rice vinegar (rice wine), brown sugar, ginger, and green onion. Drain, coat the chicken with potato starch before frying.

Fry the chicken until golden brown, serve immediately with sidedish of your choice.

Home-made Gnocchi with Simple Tomato Sauce

My very first time to make this Simple Home-made Gnocchi (Italian Dumplings),I think I could still improved it next time specially the shape. I had difficulty in shaping the fork in each dough. My mashed potato is too soft, that's why I added more flour into it. For the first timer, the taste is simply good!

For the gnocchi:
1 big potato
some all purpose flour
1 egg
olive oil

For the sauce:
2 medium tomatoes, chopped
1 small onion, chopped
3 cloves garlic, chopped
some fresh basil leaves, chopped
Italian seasoning
salt and peppert

Cook the potatoes until soft, drain, let cool, and mash the potato. Knead the mash potato with egg, flour, salt, and a drop of olive oil until the mixture is well mixed. Take a handful of dough and roll into strips. Cut cross-wise into bite size.

Heat a drop of olive oil, add tomatoes, onion, garlic, basil, Italian seasoning, salt and pepper. Add little hot water, let it boil until cook. Blend the sauce in the blender, then bring back to boil until thicken.

Bring salted water to a boil. Add gnocchi, cook until they rise to the surface. Drain the gnocchi, toss with the sauce for a minute.

Parmesan cheese can be added, if desired. Serve immediately.

Weekend Food Tour: Kuo Yuan Ye Cake Museum

Last year, we had a field trip in one of the Cake and Pastry Museums here in Taipei.

Simply No Bake Cheesecake

Thanks for all the prayers and concern, guess It's not time yet even with all those technologies and meds I had. Maybe, we'll try IVF next time. So sad, this morning in the news...I saw a baby abandoned ( the baby was wrapped and thrown in a garden) by parents and here I am trying to have one :(

Fried Fish with Garlic Sauce

This is just like I posted yesterday from Cookboo Fish 100. The original title is Fried Flounder with Garlic Sauce. I used tilapia and lessen the red chili. I cut the fish to fit in my pan.

1 fish
3 tablespoon flour
2 tablespoon chopped garlic
1 red chili
1 tablespoon wine
2 tablespoon soysauce
2/3 cup water
1 teaspoon sugar
1 teaspoon sesame oil
salt and pepper

Spinkle the fish with salt and pepper, and marinate for 10 minutes. Fry the fish until done. In another pan, heat oil and saute garlic, green onion, and red chili. Pour seasonings in, let it boil. Return the fish into sauce. When the fish absorb all the sauce, remove and serve.

Weekend Food Tour: Starcruise Libra

The photo above had been posted in my Taipei City Blog. Our first afternoon meal in Chinese Cuisine known as Ocean Palace upon checking in. Star cruise Libra from Taiwan to Japan has 3 choices of places to eat, that's included from the package. Mostly, we had our meal at Four Seasons, more of Western Cuisine. The other Inclusive Restaurant is Mariners Buffer (International Buffet) with to snacks in between meals.

I had salmon for dinner, hubby got mix of lamb, chicken and beef. I love their squid salad and cheese cake.

Breakfast for two days were just the same! Hubby and I are not breakfast eater, so that's OK!

During Gala Night, we decided to eat exactly the same meal. We had Escargot for appetizer and Beef and Prawns mixed with Spinach and Asparagus. Ice Cream Cake for desserts.

Too bad, we encountered 3 typhoons on our way to Okinawa, so we need to go back one day ahead of time. But for sure, we had a great time!

Overall, the food is just average, I think Starcruise Libra's Cuisne is more better! Although both Chef are from Malaysia.

Shrimp with Hot and Sweet Chili Sauce

Sending this simple dish from my phone! My favorite way of cooking shrimp, a usual no exact recipe. Just chop some garlic ang ginger. Saute garlic and ginger, add lemon grass (I used lemon leaf) , salt, and pepper until the shrimps turn pink. Add spicy chili sauce or powder, and sweet chili sauce. Let it boil or let the sauce thicken. Serve.

Many thanks for dropping by when I'm not around. My hubby left today, and I'm all alone once again, meaning back to reality! Right now, we're praying hard for a miracle, hoping to have a baby this time ;)
